WATERLOO — When chef Ken Hodgins walked into the Uptown 21 restaurant kitchen, he felt out of sorts.
Every burner on the industrial-sized stove was being used by the competing chefs who made it first into the kitchen to prepare the one-hour timed four-course menu.
“I was pretty nervous right off from the get go,’’ said Hodgins, chef at Envers, an upscale restaurant in Morriston, on Highway 6 just off the 401.
“They had the entire stove going and I thought what do we do now?’’ he said.
But within seconds, Hodgins was hard at work peeling potatoes to make handmade gnocchi and Envers sous-chef Lee Wilcock was laying out sheets of pasta for dessert: raviolis stuffed with smoked ricotta cheese.
The pair was among the first competitors in the third season of Uptown 21’s Iron Chef Competition. They won the cook-off by one point over competitors chef de cuisine Brian McCourt and chef de partie Mike Manley, both from Bauer Kitchen in Waterloo, who were last year’s Iron chef winners.
